Grilled Scallops with Bacon and Spicy Blueberry Sauce

This recipe is courtesy of one of our customers at a farmers’ market.  He had purchased our Blazin’ Blueberry Jam from us and used it several time as a glaze.  One day he came back and told me he had made the “Most Decadently Perfect Food Ever”.  This is the result.  I think we agree!  The jam makes a spicy blueberry sauce that pairs perfectly with the salty, smoky bacon and sweet, tender scallops.  Enjoy!


  • 2 pounds large fresh scallops
  • 8 slices of bacon
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • black pepper to taste
  • ½ cup Town Farm Gardens Blazin’ Blueberry Jam
  • 8 wooden skewers


Combine vinegar, oil, and black pepper in a medium bowl. Add scallops to mixture and toss to coat. Cover and allow to sit for 5 to 10 minutes at room temperature. Preheat grill for medium-high heat. Cut bacon into thirds. Wrap a piece of bacon around each scallop and thread onto skewers. There should be 3-4 scallops per skewer. In a microwave safe bowl, heat Blazin’ Blueberry Jam in microwave for 30 seconds until softened. Place on a lightly oiled grill rack and cook for 3 minutes per side. When the scallop is opaque in color, remove from grill and place on serving platter. Top each scallop with a teaspoonful of Blazin’ Blueberry Jam. Serve immediately.
